Ingredients:

  • 2 tbsp. extra virgin olive oil
  • 2 tbsp. fresh lime juice
  • 1 tbsp. agave nectar
  • 6 cups cubed watermelon
  • 1 cup 1/2-inch pieces pineapple
  • 1 cup 1/2-inch pieces jicama
  • 1 tbsp. snipped fresh cilantro leaves
  • 1 jalapeño, stemmed, seeded and minced

Directions:

Prep: 20 minutes, Chill: 30 minutes, Serves: 6 to 8

  1. Stir together oil, lime juice and agave nectar in a large bowl. Lightly stir in remaining ingredients
  2. Cover and chill for 30 minutes, stirring occasionally. Best if served within 1 hour.
