Watermelon, Pineapple and Jicama Salad

Ingredients:
- 2 tbsp. extra virgin olive oil
- 2 tbsp. fresh lime juice
- 1 tbsp. agave nectar
- 6 cups cubed watermelon
- 1 cup 1/2-inch pieces pineapple
- 1 cup 1/2-inch pieces jicama
- 1 tbsp. snipped fresh cilantro leaves
- 1 jalapeño, stemmed, seeded and minced
Directions:
Prep: 20 minutes, Chill: 30 minutes, Serves: 6 to 8
- Stir together oil, lime juice and agave nectar in a large bowl. Lightly stir in remaining ingredients
- Cover and chill for 30 minutes, stirring occasionally. Best if served within 1 hour.
