1½ cups beer
1 egg white
1 tsp. baking powder
4 cups vegetable oil
16 asparagus spears
Salt, white pepper and cayenne pepper, to taste
Prep: 10 minutes, Cook: about 5 minutes, Serves: 6
1. In a medium bowl, mix together flour, beer, egg, egg white and baking powder. Heat oil to 325ºF in a deep fryer or deep saucepot.
2. Dip asparagus in beer batter; fry for 3 to 4 minutes or until golden brown. Drain on paper towels, then season to taste.
