Ingredients:

1-1/2 cups 1/2-inch pieces curly kale

Olive oil cooking spray

1/2 cup chopped red onion

1/2 cup diced tomato

8 eggs, beaten

1/4 tsp. garlic salt

2/3 cup shredded Parrano cheese (in our Deli)

2/3 cup coarsely broken Primizie Simply Salted Crispbreads, plus additional for topping if you like
Directions: Prep: 15 minutes, Cook: 15 minutes, Serves: 4

Coat a large nonstick skillet with cooking spray

Add onion and cook over medium heat for 5 minutes

Add kale and tomato and cook for 5 minutes more

Add eggs and garlic salt and cook, stirring frequently, until eggs are half cooked

Add cheese and Primizie Crispbreads and cook until eggs are set
-
Sprinkle with additional crushed crispbreads, if you like
