Watermelon, Pineapple and Jicama Salad

2 tbsp. extra virgin olive oil
2 tbsp. fresh lime juice
1 tbsp. agave nectar
6 cups cubed watermelon
1 cup 1/2-inch pieces pineapple
1 cup 1/2-inch pieces jicama
1 tbsp. snipped fresh cilantro leaves
1 jalapeño, stemmed, seeded and minced

Prep: 20 minutes
Chill: 30 minutes
Serves: 6 to 8


1. Stir together oil, lime juice and agave nectar in a large bowl. Lightly stir in remaining ingredients.

2. Cover and chill for 30 minutes, stirring occasionally. Best if served within 1 hour.
